5 Rice Blend Lamb Biryani

01. Lamb shanks and cubes – 500 gm  02. 5 rice blend – 250 gm
03. Whole garam masala – 10 gm          04. Ginger garlic paste – 5 gm
05. Sliced onion – 200 gm                      06. Salt – to taste
07. Turmeric powder – 2 gm                  08. Yellow chili powder – 3 gm
09. Kashmiri chili powder – 2 gm          10. Beaten curd – 150 ml
11. Lamb stock – 150 ml                            12. Desi ghee – 50 gm
13. Mint leaves – few sprigs                    14. Coriander leaves – few sprigs
15. Saffron – few strands


01. Wash and keep the rice grains soaked in water for two hours.
02. Heat ghee in a pan, add whole garam masala, add sliced onion and sauté until light brown, keep half for garnish, add ginger and garlic paste in remaining onion, sauté. Add lamb pieces’ sauté for 10 minutes then add powdered spices and yogurt, stock and cook till well done.
03. Par boil the soaked rice in salted water until 80% done. Pour rice overcooked lamb, sprinkle, fried onion, coriander, mint, saffron and little ghee on top and cook on dum until steam comes out. Serve hot with raita
